Grilled Fish and Dirty Rice

A few months ago we went to Pappadeaux for dinner. I convinced Patrick to try the dirty rice. He always orders fries and the rice at Pappadeaux with lemon butter is out of this world! He ordered some sort of blacked fish with crawfish and lemon butter over dirty rice. We still talk about how good that combo is!

Grilled Fish and Dirty RiceI don’t know if this recipe really qualifies as dirty rice, but it is soooo good with grilled fish. We eat this dish at least once a week. I’m not saying this dish is necessarily healthy because I do use a lemon butter sauce, but it is definitely lighter then the fried fish we usually eat. You can grill the fish in a grill pan if you don’t want to deal with preparing an outside grill, but I love the char you can get with an outside grill.

Grilled Fish and Dirty RiceSince we have been grilling so much fish I have learned a few tricks to set you up for success!

1. make sure you clean the grates on your grill really well and apply a very light layer of vegetable oil then wipe down with a paper towel 2. apply a very thin layer of olive oil, vegetable oil, or coconut oil to the fish before seasoning 3. salmon, tuna, and sword fish are usually thick enough to lay directly on the grate 4. delicate fish such as the tilapia I used needs to be placed on a grill plate or a piece of tin foil.

Grilled Fish and Dirty Rice
Ingredients
  • 1 pound of fish, salmon, tilapia and grouper work best
  • 2 tbsp blackening seasoning (whole foods has a great in house low salt version)
  • 1 tsp garlic powder
  • pepper to taste
  • 2 cups of prepared white or brown long grain rice
  • 1 cup chopped red bell pepper
  • 1 cup chopped onion
  • 1 tbsp chopped garlic
  • ½ cup chopped tomato
  • 1 tbsp of blackening seasoning
  • 1 tsp salt (if you are using a low salt blackening seasoning)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 large lemon
  • ½ cup melted butter
  • chopped fresh basil
  • ¼ cup of oil
Instructions
  1. Let the fish sit out for 30 minutes to come to room temp
  2. Heat the grill
  3. Lightly oil the fish and pat the seasoning thickly on top
  4. Lay a piece of tin foil on the grill and top with the fish
  5. Grill for 3-4 minutes on each side until the fish is heated through and opaque
  6. Preheat the oven to 400 degrees
  7. In an oven safe pan heat oven medium and add 1 tbsp of oil
  8. Saute peppers and onions
  9. Add chopped garlic once onions are translucent
  10. Turn off the heat and add in the rice and tomato
  11. Mix through and season with the blackening spice, garlic powder, paprika, and salt/pepper
  12. Cook for 10 minutes until the rice starts to crisp slightly
  13. Add lemon juice to melted butter
  14. Serve over the rice and fish
  15. Sprinkle with fresh basil

Do you ever watch those videos on tips and tricks for commercial food? They use laundry pins and paper towels to prop food up. Spray with oil to get the food glistening. Taking pictures of real food is sometimes so difficult. So many bloggers make their food early in the day then reheat later. Currently I work around 50 hours a week and try to squeeze blog time in whenever I can. For this dish I had exactly one hour before the sun set to try and prepare the food and my “table setting”. Usually I have time to think about the colors and ways to really show you guys how delicious the food really is. This recipe entailed a ton of comical mishaps along the way, but I had to post because it really is one of my favorite new meals! The rice has just enough crisp to offset the flaky fish and the lemon butter soaks right into each bite.

Cajun Turkey Plus Spicy Stuffing

Every year I make an herb stuffed turkey. This year we wanted to try something a little different. We have been trying out so many cajun recipes lately and thought we would spice up our normal Thanksgiving routine.

I confess I did buy one of those little cajun spice injector kits, but the seasoning for the crust is really what takes it over the top! I made a 12 pound turkey so we would have lots of left overs for the busy weekend ahead. This meat pair perfectly with whole wheat bread and all the fixings for a turkey sandwich!

The skin came out perfect due to the cooking technique. Crank up the heat to 420 degrees for 30 minutes uncovered then lower the heat to 350 for the remaining 2.5 hours and cook with a layer of foil over the top.

Now lets talk about the stuffing. I almost always use my mom’s stuffing recipe. Fulled with fresh tart cranberry, spicy sausage and lots of veggies. To go along with the theme I skipped the cranberries and used andouille sausage over my usual ground sausage. This would be perfect on a serving platter stuffed into the turkey once both dishes are fully cooked. It is hard for me to ever say stuffing is “beautiful” but it sure is tasty!

Juicy cajun turkey with spicy stuffing!
Ingredients
  • For the turkey:
  • One turkey 10-12 lbs (cleaned and patted dry)
  • 1 jar of cajun injector butter with syringe OR 2 cups of melted butter with 2 tbsp of cajun seasoning mixed in
  • 2 cups of chicken broth
  • 2 tbsp of garlic powder
  • 1 tbsp of salt
  • 1 tbsp of paprika
  • 1 tbsp of cajun seasoning
  • 1 tsp of cayenne pepper
  • Roasting pan and foil
  • For the Stuffing:
  • ½ pound of andouille sausage sliced or chopped
  • 2 stalks of celery chopped
  • 1 large yellow onion chopped
  • 1 bag of stuffing bread crumbs, I used peppridge farm
  • 2 cups of chicken broth
  • 2 tbsp of salted butter
  • 1 tbsp of cajun seasoning
Instructions
  1. Preheat the oven to 420 degrees.
  2. Place the turkey in a roasting pan.
  3. Use the injector to insert the butter under the skin on the top layer, in the thighs, in the breast, and anywhere you think needs extra juice!
  4. Mix together the seasonings and rub them into the skin all over.
  5. Cook for 30 minutes then lower the heat to 350 degrees.
  6. Add the 2 cups of broth to the bottom of the roasting pan.
  7. Inject butter into the meat one more time.
  8. Cover with foil.
  9. Cook turkey for 2 more hours then start the stuffing.
  10. In a large oven safe sauce pan add the onions, celery and sausage.
  11. Cook until onions are translucent then add the butter.
  12. Add the remaining broth and bring to a boil. '
  13. Take off the heat and add bread crumbs and seasonings.
  14. Mix through and cover with foil.
  15. Bake in the oven for 30 minutes.
  16. Uncover your turkey and spoon the broth over the top and anywhere that looks dry.
  17. Cook the turkey for another 30 minutes or until internal temp is 165.

Cajun Alfredo With Grilled Chicken and Shrimp (AND ZOODLES)

So I finally made it. I am only one day away from completing my first 14 day cycle on this carb and sugar cleanse. I bought a veggie spiralizer so I can replace my pasta with zucchini. I know that is not for everyone – including my boyfriend. So, for this recipe to help ease you into the low carb lifestyle I have included some fresh pasta as well. I can eat this without the pasta. The sauce over the zucchini is delicious.

You do not have to add chicken and shrimp, but I personally just like the variety. The zucchini noodles soak up the cheese sauce perfectly.

I bought a $15 grill from target I like to use for these kind of recipes. It is so easy and chars the shrimp exactly the way I like it.

Cajun shrimp and chicken over fresh pasta mixed with zucchini noodles sauteed in alfredo sauce.
Ingredients
  • 2 large zucchinis
  • 2 oz fresh pasta
  • 1 clove of garlic chopped
  • 4 oz shredded Parmesan
  • ¼ heavy cream
  • ¼ chicken stock
  • ½ pound of large peeled shrimp
  • ½ pound of boneless skinless chicken breast
  • ½ stick of salted butter
  • salt and pepper
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp red pepper
  • 1 tbsp italian seasoning
Instructions
  1. Set up the grill then prepare the chicken and shrimp.
  2. Liberally season the chicken and shrimp with salt and pepper.
  3. Grill until the shrimp are pink and blistered and the chicken is cooked through,
  4. Spiralize the zucchini.
  5. Melt the butter in a sautee pan and sautee the zucchini and garlic.
  6. Add the chicken stock and cook until "noodles" are tender over medium high.
  7. Add the heavy cream and cook at medium.
  8. When the sauce starts to thicken add in the cheese and spices.
  9. Reduce to a simmer and let the sauce finish thickening,
  10. Add in the fresh pasta.
  11. Toss in the shrimp and chicken.
  12. Top with parm.

If you are feeling adventurous skip the fresh pasta altogether! Enjoy!
