Coca Cola cake is my FAVORITE chocolate cake. It is so dense and fudgy it reminds me that it is definitely a special occasion cake. If you are looking for something not too sweet- this is NOT the cake for you.
I didn’t know this cake existed until I moved to Georgia. It is a fun spin on the traditional Texas sheet cake.
You can skip the toasted pecans on top, but I love the extra salt and crunchy texture.
Ingredients-
For the Cake:
1 cup of coca cola
1 cup cooled brown butter
2 tbsp of vanilla extract
2 eggs
1/2 cup of sour cream
1/2 cup of cocoa powder
2 cups of AP flour
1 cup of sugar
3/4 cup of brown sugar
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
For the Glaze:
1 cup of coca cola
1/2 cup melted butter
3 tbsp cocoa powder
1 tbsp vanilla extract
2 cups powdered sugar
Pecans (Optional)
Directions-
Preheat oven to 350 degrees.
Mix the Coca Cola, butter, vanilla, eggs with the white and brown sugars.
Add in the dry ingredients slowly until just mixed.
Add in the sour cream, do not over mix.
Bake in a sheet pan for 30 minutes or until cake is set in the middle. (I like using a 9 X 13 here)
While the cake cools make your glaze.
In a saucepan add the coca cola, butter, cocoa, and vanilla stirring over medium low heat.
Turn off heat and whisk in the powdered sugar until a glaze forms.
Pour over your cake and sprinkle with pecans.
I like to slightly chop and toast my pecans first.
Cover and enjoy at room temperature for up to 4 days!
